Today I will present another delicious recipe for Pavlova, this time made with a sweet blackcurrant sauce and topped with cream and fresh blackcurrants. Both soft and crispy Blackcurrant Pavlova is the perfect dessert for the summer time. 

The amazing Blackcurrant Pavlova cake named after the Russian ballet dancer Anna Pavlova consists of a base made of a meringue crust topped with whipped cream and fresh blackcurrants. See how to prepare this delicious dessert, widely popular in New Zealand and Australia.

  • 4 large egg whites
  • 225g/8oz caster sugar
  • 2 tablespoons cornflour
  • 1 tablespoon vanilla extract
  • 1 tablespoon white wine vinegar




For the topping:

  •  450g/1lb fresh blackcurrants
  • 2 tablespoons corn flour
  • 3 tablespoons caster sugar
  • 300ml/½ pint double cream
  • 200g carton half-fat crème Fraiche
