How to make Aligot-A Traditional French Dish with Cheese ?

Aligot is a delicious French dish made from fresh cheese blended into mashed potatoes, dairy cream, butter and some garlic. Aligot is a traditional meal in L'Aubrac region, southern France and one of the Flagship specialities of Aveyron.

Most useful for the preparation of Aligot is Cantal cheese, which is the easiest to find, but if you have the opportunity to find Laguiole, then you can try to resemble the original recipe for Aligot.


This is one of my favourite meals from France and here is what you need to prepare this delicious dish.

Ingredients for Aligot :

Jacket potatoes - 500 g
Cantal cheese (fresh) - 300 g
Butter - 50 g
Cream - 50 g
Garlic - 1 clove
Salt and pepper - to taste

How To prepare Aligot?

Aligot recipe it's not very difficult as you can see below, but you have to follow the below steps carefully and precisely as described:


Preparing Aligot: Step 1

Boil jacket potatoes in boiling salted water for 30 minutes. Then clean them and transfer to a bowl to be mashed.




Preparing Aligot: Step 2

Grind the cheese and add it to mashed potatoes, by whisking quickly and vigorously while the potatoes are still warm.




Preparing Aligot: Step 3

In a baking dish, place the butter and sour cream, put everything on slow fire and blend persistently and quickly.




Preparing Aligot: Step 4

Once the sour cream and butter mixture warms up, add the cheese and mashed potatoes. Stir again with a wooden spoon, leaving the mixture over medium heat.




Preparing Aligot: Step 5

Add the mashed garlic and some salt and stir again. Then add pepper to the dish as per your taste.




Preparing Aligot: Step 6

Serve when still hot.

Aligot must be served hot until the cheese is soft and malleable so that the mixed mass of potato and cheese had a smooth consistency.
